Ingredients
- 100g (2 cups) fresh lion’s mane
- 14 oz pizza dough (click here for our preferred recipe)
- 1 oz mozzerella cheese slices (seven slices)
- 4 oz goat cheese
- 3 fresh basil leaves – chopped
- 1 teaspoon fresh thyme
- 1/2 teaspoon cracked pepper
- 3 tablespoons corn meal
- 2 tablespoons olive oil or butter
- Flour (to roll out dough)
*Pizza sauce can be added if desired
Directions
- Cut the lion’s mane into quarter-inch strips. In a large pan on medium-high, add olive oil (or butter) and mushrooms. Sautée for 10 minutes, stirring every 2-3 minutes. Once browned, remove pan from heat.
- Pre-heat oven to 475°. Dust the counter and pizza dough with flour. Roll out the dough into a 12″ circle, spread corn meal into a 9″ pan, and place the dough into the pan.
- Spread pieces of goat cheese along the edges of the crust and fold the edge onto itself. If desired, brush crust with olive oil or butter.
- Place slices of mozzerella cheese evenly onto the crust. Sprinkle on chopped basil and thyme. Lightly dust with cracked pepper. Place on lion’s mane strips.
- Bake pizza for 10 minutes, then turn on the broiler and let pizza cook for another 5 minutes or until crust and cheese are golden brown.
